Concept

It's not fusion. It's interpretation.

ALL EN was born from a simple idea: to celebrate the very best of Portuguese produce through the precision of Japanese Teppanyaki.

On one side, the precision, control of fire and respect for technique that define Japanese Teppanyaki. On the other, the richness of Portugal’s finest produce: fresh fish and seafood from our coast, carefully selected and
dry-aged meats, seasonal vegetables and ingredients chosen for their quality, origin and seasonality.

At ALL EN, technique is never used to transform the ingredient. It exists to respect it, revealing the very best that each product has to offer. This is not fusion cuisine. It is a contemporary interpretation of Portuguese gastronomy through the precision of Japanese Teppanyaki

Concept

A Meeting of Portuguese Cuisine and Japanese Teppanyaki

The name ALL EN is inspired by the Japanese concept 縁 (en), a word that represents the connections, encounters and relationships that shape our lives.

ALL expands this meaning.

It represents everything that comes together to create the experience: cultures, techniques, ingredients, people and stories. The meeting of Japanese precision and the character of Portuguese produce. The connection between the Chef, local producers and every guest seated at the counter. The balance between tradition and a contemporary interpretation of Portuguese cuisine.

But ALL EN is more than the sum of these elements. It is the belief that a dining experience is only complete when everything comes together: the fire, the timing, the ingredients, the setting, the conversation and the moments shared around the table.

Japanese Precision. Portuguese Soul.
