Over a career spanning more than fifteen years, Portuguese Chef André Santos has worked in some of the most prestigious kitchens in Portugal and abroad, building extensive experience in fine dining while mastering the Japanese art of Teppanyaki, a technique that now lies at the heart of ALL EN’s identity.
His journey has taken him to acclaimed restaurants including Midori, the first Japanese restaurant in Portugal to be awarded a Michelin star, Pure C in the Netherlands, as well as a number of renowned culinary projects in London, the Azores and, most recently, HBD Príncipe in São Tomé and Príncipe.
Each destination introduced new ingredients, new techniques and new perspectives on cooking. More importantly, however, it reinforced one fundamental belief: exceptional cuisine begins with respect for the ingredients, for the producers behind them and for the people gathered around the table.
That philosophy became the foundation of ALL EN.
More than a restaurant, ALL EN is an expression of a simple belief: that great food has the power to bring people together.
It is where cultures, techniques, ingredients and people meet in an experience where fire, timing and precision exist for one purpose alone — to reveal the very best of every ingredient.
Today, Chef André Santos leads ALL EN in Lisbon, using the precision of Japanese Teppanyaki to showcase the finest Portuguese produce, always respecting its provenance, seasonality and character. With just 10 seats at the counter, every service is designed to be intimate, personal and immersive. Because for Chef André Santos, cooking is about more than preparing food, it is about sharing stories, creating connections and bringing people together around the table.
